Sunday Chicken Dinners Part One

Remember going to gramma’s for Sunday chicken dinners? Usually, they were baked or fried. While incredibly yummy, we need more than baked or fried chicken! Here are 16 Sunday chicken dinners to impress your family and friends with!

Sunday Chicken Dinners - Part 1 - CookingWithLisaB

Mozzarella Chicken

4 whole chicken breasts (boneless, skinless)
2 eggs, beaten
4 eggs Italian breadcrumbs
3/4 lb. margarine
1/2 lb. fresh mushrooms
1/2 lb. Mozzarella cheese

  1. Heat oven to 325 degrees Fahrenheit.
  2. Slice breasts into serving size pieces.
  3. Dredge chicken breasts in the egg, and then the breadcrumbs and fry in margarine until brown (10 minutes).
  4. Sauté mushrooms and set aside.
  5. Place chicken in 9 x 13 dish and put mushrooms on top.
  6. Bake for 10 to 15 minutes. Then add cheese on top.
  7. Put chicken back in oven until cheese melts.
  8. Serve with baked baby potatoes and steamed vegetables
  9. Serves 4-6.

Baked Chicken Parmesan

2 1/2 lbs. chicken breasts – boneless, skinless
2 1/4 c. breadcrumbs
2/3 c. Parmesan cheese
3 tbsp. parsley
1 tsp. salt
3/4 c. butter
1 tsp. Dijon mustard
1/2 tsp. Worcestershire
1 sm. garlic clove
1 sm. jar spaghetti sauce
spaghetti or linguine noodles
fresh mozzarella, sliced

  1. Preheat oven to 350 degrees.
  2. Rinse chicken and pat dry.
  3. Combine the crumbs, cheese, parsley, and salt.
  4. In a saucepan, melt the butter; beat in mustard, Worcestershire, and garlic.
  5. Dip chicken in butter and then roll it in the crumb mixture.
  6. Set the chicken in a shallow baking pan.
  7. Bake 55 minutes or until golden.
  8. While chicken is baking, cook noodles as directed and heat the sauce.
  9. Top chicken with mozzarella slices and place pan under the broiler for about 2-3 minutes.
  10. Serve over noodles and sauce.

Chicken-Bacon Bake

6 chicken breasts- boneless, skinless
salt, pepper
4 Tbsp. butter
1/2 c. honey
1/4 c. mustard
1 tsp. salt
1 tsp. curry powder
4 strips crispy bacon, crumbled

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Salt and pepper chicken breasts.
  3. Place chicken breasts into greased, shallow baking dish.
  4. Bake chicken for 30 minutes.
  5. While chicken is baking, whisk together the butter, honey, mustard, salt, and curry powder.
  6. Baste the chicken with the sauce.  Bake for another 7 minutes.
  7. Top with crumbled bacon.
  8. Serve with baked potato and seasoned, steamed veggies.  Serves 6.

Glazed Chicken

1 tbsp. fresh ginger (1/2 tbsp powdered)
1/4 c. soy sauce
1/2 c. apple cider vinegar
3 tbsp. minced white onion
3 tbsp. honey
5-6 boneless, skinless chicken breasts
salt and pepper

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Wash and pat dry chicken breasts.  Sprinkle them with salt and pepper.
  3. Place the chicken breast in greased baking dish and bake 30 minutes.
  4. While the chicken is baking, whisk together the ginger, soy sauce, vinegar, onion and honey.
  5. Pour into a saucepan and reduce over medium heat till the sauce coats the back of a spoon.
  6. Once 30 minutes is up, turn on the broiler.
  7. Baste the tops of the chicken, broil 5 minutes.
  8. Turn the chicken over and repeat baste/broil.
  9. Serve with a veggie salad.

Creamy Chicken N Mushrooms

4 whole chicken breasts, sliced in half longways
salt and pepper
11/2 cups sliced baby bella mushrooms
1 can cream of mushroom soup
1/2 soup can sherry wine
1 c. sour cream
Paprika

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Wash and pat dry sliced chicken breasts.  Sprinkle with salt and pepper.
  3. Arrange chicken in a shallow greased baking dish so that pieces do not overlap.
  4. Cover with mushrooms.
  5. In a medium bowl, whisk together the soup, sherry, and sour cream.
  6. Pour over chicken, completely covering it.
  7. Dust with paprika.
  8. Bake for 45-50 minutes.
  9. Serve over prepared rice and steamed veggies.  Serves 4.

Creamy Lemon Chicken Bake

6 boneless, skinless chicken breasts (about 3-4 lbs)
salt and pepper
2 c. sour cream
1/4 c. lemon juice
2 tbsp grated lemon zest
4 tsp. Worcestershire sauce
3 tsp. garlic salt
1/2 tsp. paprika
1 c. breadcrumbs
prepared linguine noodles

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Rinse chicken breasts and pat dry. Sprinkle with salt and pepper.
  3. In a large bowl, whisk together sour cream, lemon juice, salt, Worcestershire sauce,  garlic salt, and paprika.
  4. Dredge the chicken breasts in sour cream mixture, place in bowl and top with any remaining sour cream.
  5. Cover; refrigerate overnight.
  6. Remove chicken breasts, keeping the chicken well-coated with sour cream mixture.
  7. Dredge the chicken in the breadcrumbs and coat well.
  8. Place in a buttered baking dish and bake at 350 degrees for 45-50 minutes.
  9. Serve over linguine noodles and sprinkle with lemon zest. Serves 6.

Special Chicken Bake

1 cup sour cream
8 boneless skinless chicken breasts
8 slices smoked deli ham
1 can cream of chicken soup
1 can cream of celery soup
1 tsp salt
1 tsp pepper
2 cups sliced baby bella mushrooms
2 cups thinly sliced celery, reserving leaves

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Wrap each chicken breast with a slice of deli ham.
  3. Place the wrapped chicken breasts into a greased baking dish.
  4. Sprinkle mushrooms and sliced celery over the chicken.
  5. In a medium bowl, whisk together both soups, salt, and pepper.
  6. Pour over chicken breasts and bake 1 1/2 hours.
  7. Spoon chicken and sauce over rice or vegetables.
  8. Garnish with chopped celery leaves.  Serves 8.
