So, what in the world are Sodie-Cakes, you ask? Why they are just about the best thing next to chocolate and cheesecake! These yummy little treasures are cupcakes made with soda! Here in Illinois, my family and I call soda “sodie”. I mean, who would want to eat a Pop-Cake? Doesn’t quite have the same ring, does it?
What a perfect way to spend an afternoon with the kiddos? This recipe is super kid-friendly! Also a perfect ending to dinner!
Pictured here, we have the Lemon-Lime Sodie-Cakes topped with fresh quarter wedges of lime and lime zest. SOOO light and refreshing!
Let’s start with the base:
1 12-ounce can of lime soda (I used a FrescaTM)
1 box white cake mix
1 fresh lime
2 tsp lime extract
1 tub white lemon or white frosting
Next, preheat the oven to 340 degrees Fahrenheit. Line a muffin tin (24 of them) with either paper or foil cupcake liners.
In a large bowl, dump in the cake mix.
Next, slowly pour in the soda. Beat with a mixer on low for a minute. Scrape the sides and beat again on medium speed another 2 minutes.
Pour the batter into the lined muffin tin and back about 15-18 minutes. If you shove a toothpick into the center of the muffin, it should be clean when you pull it out.
Cool these tasty little gems for about 10 minutes, then transfer the cupcakes to a wire rack to cool completely. You can’t frost warm cupcakes. You don’t want the frosting sliding off, do you? Of course, if you are into messy cupcakes — go right ahead and slather those babies up!
In a small bowl, stir together the extract and the frosting. Transfer the frosting to a piping bag fitted with your fave tip or a plastic baggie — whichever you have on hand.
Zest the lime, and chop the zest to a fine sprinkle. Cut the lime into 1/8″ slices and then quarter them. Sprinkle the cupcakes with a bit of the zest, decorate with a lime quarter.
If, and I mean if, you have any of these left — cover them up in an air-tight container and keep them in the fridge.

Creamsicle Sodie Cake = french vanilla cake mix, orange sodie, orange zest, Frosting: orange extract, orange food coloring, white frosting OR orange-flavored frosting.
Purple People Eater Cake = strawberry cake and grape sodie, with white frosting + grape KoolAidTM powder, purple icing sugar to decorate.
Ginger Sodie Cake = spice cake mix + ginger sodie, with white frosting and 1 tsp all spice mixed in.
Rootbeer Float Sodie Cake = chocolate cake mix + root beer sodie, vanilla frosting, chocolate sprinkles to decorate
Choco-Cherry Sodie Cake = chocolate cake mix, cherry sodie (oooh… Dr. PepperTM Cherry!) white frosting with cherry extract and red food coloring, top with Maraschino cherries or Bing Cherries!
